What I did yesterday when the craving came about it, I went ahead and put the beans in a container and let them soak over night with a tiny bit of salt (it cuts the cooking time down by half) Also, when you come look at them, they will have some foam.
Here is our Cast of Characters: Half a small bag of Pinto Beans, one medium onion, 1 tbsp salt and a pinch of pepper, cilantro, 3 tomatoes, 1 bell pepper, 3 garlic cloves, and 4 slices of that thick yummy bacon. First, lets rinse these bad boys off, take that foam off! Pour them in a strainer. and rinse with cold water.
Next, we are going to go ahead and put these in the pot to cook. Along with the 3 cloves of garlic, when we fill our pot up, let fill it about 2 inches over the beans, give or take. And lets add the salt
Once they are in the pot, let go ahead and chop up about 4 slices of oinker and throw them in there, so it can get a yummy flavor
In we are going to go ahead and rinse our tomatoes, bell pepper and cilantro. While these GAS
We are going to use about a quarter of the cilantro bunch. Then we rinse!
In the mean time, we have the beans cooking on low heat, with the lid on it, but....leave a tiny slit so the steam can come out
I'm sure your probably thinking "So...what do I do for the next 1hr and 15min"
This is what I'm going to do...
This is what I'm going to do...
OK...I'M BACK!! There is about 25min left for the beans to cook, at that time we are going to add the tomatoes, bell pepper, and onion
After the 25 min, we will add the cilantro
Here is the finished product!!! Serve and enjoy :)
